Gabriel is important to the Apocalypse so he's resurrected as a human with memories of a human life and no memories of his old one.
Both heaven and hell are looking for him so they can have him sound the horn on their behalf.
The Winchesters (and Castiel) have to move fast and save this postal worker who's clueless to his purpose.
